Purpose:
To help all food manufacturers, producers, retailers, caterers, enforcement authorities and other interested parties, understand and comply with the requirements of Commission Regulation (EC) 41/2009 concerning the composition and labelling of foodstuffs suitable for people intolerant to gluten and the corresponding National Regulations, covering both foods sold pre-packed and non pre-packed.

The guidance gives both regulatory and best practice advice; the latter is enclosed in shaded boxes labelled 'best practice'.
