Executive Summary
The authority followed a sampling programme which was relevant to the nature and scope of the Borough's food premises profile. The programme included the Authority's high risk food businesses and participation in regional and national sampling surveys.
The authority had been selected for audit because of reported low sampling levels in 2000, when compared with other London boroughs. There were indications however, that the Authority had subsequently increased its sampling activity.
Appropriate follow up action on food sampling was being taken in line with the authority's enforcement policy and sampling results were being used to support the service of improvement notices.
