Guidance on the application of HACCP principles
A Chapter on the application of HACCP Principles will shortly be added to PART THREE of the draft Guide to Food Hygiene and Other Regulations for the Meat Industry. The Guidance will include generic HACCP plan (selected steps) for slaughterhouses and cutting plants.
Meat plant HACCP manual and CD-Rom
A CD-Rom version of the manual has also been distributed. It contains extra material, including video clips, sample documentation and some model HACCP plans.

The manual provides an introduction to HACCP principles. A CD-Rom version of the manual is available on request from Miss Wing-Man Chan on 020 7276 8384 or by email to wing-man.chan@foodstandards.gsi.gov.uk.

HACCP training
Operators need an understanding of HACCP principles so that they can set up and maintain HACCP-based procedures. Staff should also be aware of HACCP principles so as to understand the importance of the procedures they carry out to minimise the spread of meat-borne hazards.
- Training is available from local colleges, food safety training companies and consultants, or may be provided in-house. Training is more effective if it is related to meat production.
- Meat Plant Manager's Hygiene & HACCP course - The Meat Plant HACCP Manual includes the syllabus of the two-day 'Meat Plant Manager's Hygiene & HACCP course'. The course has accreditation from both the Qualifications and Curriculum Authority and from the Meat Training Council, and participants are eligible for a qualification.
