6 tomatoes - cut into wedges 50g black olives - pitted and sliced 25g sun-dried tomatoes - drained and thinly sliced 1 medium-sized red onion - peeled and thinly sliced fresh basil
Basil vinaigrette 60ml (4 tablespoons) fresh basil - chopped 1 garlic clove - crushed 30ml (2 tablespoons) Parmesan cheese - freshly grated 60ml (4 tablespoons) olive oil 30ml (2 tablespoons) lemon juice black pepper

Arrange all the prepared salad ingredients in a large bowl or on a large plate. To make the vinaigrette, in a small bowl whisk the basil, garlic, Parmesan cheese, olive oil, lemon juice and black pepper until well blended. Pour the vinaigrette over the salad ingredients and garnish with fresh basil.
