Tomato and basil salad

Serves 4 - 6

Ingredients

6 tomatoes - cut into wedges
50g black olives - pitted and sliced
25g sun-dried tomatoes - drained and thinly sliced
1 medium-sized red onion - peeled and thinly sliced
fresh basil

Basil vinaigrette
60ml (4 tablespoons) fresh basil - chopped
1 garlic clove - crushed
30ml (2 tablespoons) Parmesan cheese - freshly grated
60ml (4 tablespoons) olive oil
30ml (2 tablespoons) lemon juice
black pepper

Utensils

sharp knife
chopping board
large bowl or plate
small bowl
whisk
garlic press
tablespoon
fork

Method

Arrange all the prepared salad ingredients in a large bowl or on a large plate.
To make the vinaigrette, in a small bowl whisk the basil, garlic, Parmesan cheese, olive oil, lemon juice and black pepper until well blended.
Pour the vinaigrette over the salad ingredients and garnish with fresh basil.
