N14010: Implementing healthier menus in residential care homes for older people: evaluation of barriers, facilitators and the impact on dietary intake
Friday 21 December 2007
Study Duration: January 2008 to January 2011
Contractor: Human Nutrition Research Centre/School of Dental Sciences, Newcastle University
Background
Barriers and facilitators to implementing FSA guidance on food served to older people in residential care, and the dietary impact of implementing the guidance, are unknown. An evidence based approach to aiding implementation will facilitate wide adoption.
Research Approach
Four care homes for the elderly will be studied on a rolling basis. Qualitative methods will be used to explore perceived barriers and facilitators to implementing healthier menus. Lessons learned from each home will inform the approach in the next so that a strategy to overcome barriers is tested. Residents’ diets will be assessed before and after implementation of new menus.
