The Food Standards Agency guidance on the safety and shelf-life of vacuum and modified atmosphere packed chilled foods with respect to non-proteolytic Clostridium botulinum has been updated as part of a routine review. It is aimed at all interested parties including manufacturers and retailers of chilled vacuum and modified atmosphere packed (VP/MAP) foods to assist in the practical development and implementation of a HACCP (Hazard Analysis Critical Control Point) based approach for these foods. The guidance is designed to help Food Law Enforcement Officers carrying out their enforcement duties. It also gives best practice information, summarising some advice of the Advisory Committee on the Microbiological Safety of Food (ACMSF).
