Approach to considering rejection of red meat carcases at a post mortem inspection

The policy outlined describes a review process for situations where an Official Veterinarians (OV) and a Food Business Operator (FBO) disagree over whether a red meat carcass is fit for human consumption. This approach does not alter the application of any official controls.


At post mortem inspection (PMI), Official Auxiliaries and Official Veterinarians (OVs) routinely identify issues that prevent a carcase and / or its accompanying offal from being passed as fit for human consumption.
