Amendments to Annex III of Regulation 853/2004 on the handling of offal from animals for human consumption
A new EU regulation, which came into force on 17 November 2014, requires stomachs of ruminants to be scaled or cleaned within the slaughterhouse before they can be transported to another approved food business for handling.

European Commission Regulation No. 1137/2014 came into force on 17 November 2014. This new EU Regulation amends Annex III of Commission Regulation No. 853/2004 on the handling of certain offal (‘stomachs and feet’) from animals intended for human consumption. Under this Regulation, when destined for further handling:
Stomachs must be scalded or cleaned; however, in the case of young ruminants intended for rennet production, the stomachs need to only be emptied.
Intestines must be emptied and cleaned.
Heads and feet must be skinned or scalded and depilated; however, when authorised by the competent authority, visibly clean feet may be transported to and skinned or scalded and depilated in the approved establishment that is further handling the feet for processing into food.
